Course Overview

Join Chef Scott Graden of the New Scenic Café in Duluth for a cultural experience centered around the kitchen, and extending far beyond. During the 3 days of each of these workshops, you will take part in a dynamic group conversation following a food-related film screening. You'll share stories and quips. You'll discuss life values, food values, and culture. You'll consider how a diverse collection of perspectives creates a whole that is greater than the sum of its parts. And you'll cook great food and discover how food supports experience, not the other way around.

This series consists of three stand-alone sessions. Register for one or all!

Session Information

Session 3 Details

Day 1: Evening screening of "Noma: My Perfect Storm" followed by a conversation about passion, business, and Scandinavian approaches to food and life. We will use a variety of successful Nordic restaurants including Noma, Faviken, and Relæ, as examples to highlight the primary values of simplicity, honesty, and awareness. Food and beverage provided.

Days 2 & 3: Preparation and production of a variety of Scandinavian-centric recipes. Many of these will be drawn directly from, or based on Scott's own Swedish heritage. Daily conversation will include finding sources of inspiration, and the challenge of holding onto traditions while simultaneously embracing new degrees of quality and modern resources and tools.

Note: This course is one session of the series. Each of these three sessions is an excellent standalone experience for students seeking a single course. For those interested in joining two or all three sessions, the information and conversation will build throughout the series.

You will need the following tools for this class:

All required tools/materials are provided by your instructor and North House and will be available once the course begins.

On the final day of the course, we will share a communal meal, beginning around 4pm, typically ending by 6pm.  Please feel free to bring a beverage of choice to enjoy with dinner (adult beverages are okay). You are welcome to bring a guest.

Optional Tools

Feel free to bring your favorite tools and whatever materials you might feel appropriate for this course.
