Winter Squash Windfall

Course Overview

A roasted squash, simple and well done, can be delicious in its own right. But gourds of all varieties can be much more versatile too. Work with Chef Graden to create and enjoy a wide range of squash- and pumpkin-based dishes, including, but not limited to, acorn squash pie, butternut squash ravioli, winter vegetable pave, butternut squash soup with pepitas and creme fraiche, kaddo bourani, and butternut squash gnocchi.

Additional materials fee paid to instructor when class starts: includes dinner for 2 on Day 2 of the course

You will need the following tools for this class:

All required tools/materials are provided by your instructor and North House and will be available once the course begins.

On the second day, we will share a communal meal, beginning around 4pm, typically ending by 6pm.  Please feel free to bring a beverage of choice to enjoy with dinner (adult beverages are okay). You are welcome to bring a guest.

Optional Tools

Feel free to bring your favorite tools and whatever materials you might feel appropriate for this course.
