Pies and Tarts for Spring and Summer

Course Overview

A perfectly baked, decorative pie is the ideal centerpiece of any spring or summer gathering (or fall, or winter)! This class is a chance to learn skills that can be applied year-round, though the focus will be on flavors and fillings that are perfect for the warmer months. The pies in this class will be largely fruit based, though we will also incorporate custard. We’ll make pies and tarts ranging from simple and elegant to complicated. Spend the weekend perfecting your pie technique and learning new recipes to mix up your summer desserts!

This class requires students to be able to use a rolling pin, and to use their hands in blending the crust. If a student does not have the hand strength or dexterity for mixing, they can contact the instructor to work out an alternate plan for dough preparation.

Students age 16+ may register for this course on their own. 


Required Tools

  • Containers for transporting pies/tarts- each student will be going home with several pies.

Optional Tools

  • If you have a rolling pin or pastry blender that you already know and love and feel good using, feel free to bring it! Otherwise, North House has many of both for students to use.
