Bounty of the Big Lake: Fish Cookery

Baked fish filet

Course Overview

We may spend a great deal of time enjoying the gift of Lake Superior’s beauty from the shores or from a vessel. How often do we think of the delicious food ingredients dwelling below the surface? In this class, we will discover different species of fish that thrive in the Lake as we use fish as our main ingredient in an exploration of cooking methods from around the world. Our creations will depend on the fish that are available. Expect dishes such Pescado a la Veracruszana, cedar-plank baked fish, or smoked fish spread. We will taste each dish and discuss appropriate side dishes.
