Autumn Apple Abundance: From Sweet to Savory

Course Overview

Fall means apples in abundance! In anticipation of the season, join Chef Graden for an exploration of the versatile applications of a fruit that is both ubiquitous and under-utilized. This class will cover preparing (and eating!) all of these recipes, and more: apple and cran-apple ciders, apple pie, apple cider brined pork tenderloin, pommes d'eve, tarte tatin, applesauce and apple butter. Note, on the evening before the class, Scott will give a free talk at 7pm; students are highly encouraged to attend. On Day 2, the class will culminate in a shared meal at 4pm.

Required

You will need the following tools for this class:

On the first evening, we will gather for a social hour from 5-6pm with light snacks, and then screen the film at 6pm. BYOB. On the final day of class, we will share a communal meal, beginning around 4pm, typically ending by 6pm.  Please feel free to bring a beverage of choice to enjoy with dinner (adult beverages are okay). You are welcome to bring a guest.

  1. Assorted containers for bringing food home; these classes often include abundant take-home goodies.
  2. A basket or box for those containers

Optional Tools

Feel free to bring your favorite tools and whatever materials you might feel appropriate for this course.
