Scandinavian Gifts from the Kitchen: Make, Eat and Take!

Course Overview

The North House teaching kitchen becomes Santa Scott’s workshop for two days, as students handcraft an impressive array of Scandinavian holiday treats, suitable for any festive occasion and gift-giving need. Under the careful eye of Chef Scott Graden of the New Scenic Café, students will produce a bevy of treats to take home (“quality control” snacking encouraged!). Students will learn new skills and revisit old favorites from the kitchens of Norway, Sweden, Denmark and Finland. As a course, students will create and leave with many items ready to serve, give away or eat immediately. Recipes will be provided for an extensive list of treats; as time allows, students will make as many items as they can handle (last year's class produced treats of more than a dozen varieties!). Items may include rosettes, saffron buns, lefse, kringle, rusks, speculos, krumkake, Swedish rye bread, aebelskivers, pullah, yulekake, cardamom bread, sandbakkel, toscakake, mandelformas, pickled beets, mojakke, kroppkako, Swedish meatballs with lingonberries and glogg. Several of these items store well, and can be given throughout the winter. Santa’s elves have got nothing on you after this course: you’ll be well stocked and ready to celebrate! Participation in the course will include a culminating community meal on Sunday evening for you and your guest.
