Royal Weekend: Swedish Princesstårta

Course Overview

Named for how much Princesses Margaretha, Martha, and Astrid of Sweden loved this cake, the Princesstårta, or Princess Cake, has been a mainstay in Swedish baking for nearly a century! It is a perfect celebration cake with space to either stay traditional or get creative. In this class students will learn the varied techniques that the cake requires, plus, we’ll explore some Swedish cookies in between steps for the cake!

This class can be taken as a stand-alone, or along with its German counterpart, Royal Weekend: German Prinzregententorte, held the following day.

NOTE: This cake is made with marzipan, so this class is not suitable for students with almond allergies! A version of this cake can be made without gluten, but dairy-free and egg-free versions will not be included in this class.

Students should have the ability to handle kitchen handtools (whisk, rolling pin, electric mixer, knife, etc.) and the ability to stand/sit at a workbench (if a student cannot stand or sit on a tall stool at a workbench, an alternative workspace can be set up- inform instructor if this is needed). Students age 16+ are welcome to register. Youth ages 10 and up may attend if accompanied by an adult. Adult/child pairs will complete one project and pay one materials fee. 

Required Tools

  • A container for transporting baked goods (instructor will provide cardboard cake rounds for the cake)

Optional Tools

  • If you have a favorite rolling pin, feel free to bring it! Otherwise all tools will be provided.
