Course Overview

Valborg is a cherished Swedish tradition that marks the arrival of spring and bids farewell to winter. Originally about keeping evil spirits at bay, today, it’s a joyful event. Marked by celebratory bonfires, the community comes together to socialize, sing songs, and enjoy the fire’s warmth. Usher in spring with the best northern tastes of the season. Class will make tasty deviled eggs, pickled beets, and beet-cured gravlax. Enjoy the delight of making colorful, layered smörgåstårta on flatbread with an egg, kalles kaviar, dill, and red onion recipe and a summery version with Yker Acres hot dog, mashed potato, crispy onion, ketchup, and mustard. Top this top-notch picnic off with a Swedish mocha tart. Enjoy all the food and fun in the glow of the bonfire around 4pm on day two of class–a wonderful way to step into spring in the Northland! Students may bring a guest to the meal.
