Skin Three Ways: Cotechino, Ciccoli, and Chicharrones

Course Overview

Skin is not just the domain of leather! In this class, we will make three different traditional dishes made with animal skins. We will make cotechino (a type of Italian sausage), ciccoli (Italian pressed cake), and chicharrones (pork rinds). We will make and enjoy these delicious traditional foods that utilize often-overlooked parts of the animal. Get all the benefits of en vogue things like collagen peptides straight from the source, culminating in a shared meal.

Session Information

This course is part of Hide Week 2026. Plan to arrive a day early for the Tanner’s Conference Day on Friday, May 15, which features demonstrations, speakers, and community gatherings offered as a benefit to students enrolled in Hide Week coursework. Full schedule available online in winter 2026.
