Scandinavian Smörgåsbord

Course Overview

Enjoy a Scandinavian culinary adventure and discover the elements of the smörgåsbord! Join chef Scott Graden, owner of the New Scenic Café, to learn the art of this Nordic structured feast. Students will make smoked salmon, pickled beets, rye bread/crostini, deviled eggs, beet-cured gravlax, jam, and an olive mix. On Day 2, the class will culminate with a shared meal at around 4pm. Students may bring a guest to the meal.

Required Tools

  • Assorted containers for bringing food home
  • A basket or box for those containers
  • Beverage for shared meal

Optional Tools

  • Bring your favorite apron, if you wish.
