Course Overview

A surprising and delicious world of traditional plant proteins awaits. Developed over centuries in East and South Asia, but largely neglected or misunderstood in the West, products such as tempeh, yuba, and braised gluten are healthy, delicious, sustainable, and versatile food products that you can make at home. In this course, we will explore the rich traditions and creative techniques that transform simple grains and legumes into savory and filling delicacies. We will make these items from scratch, practicing various processing methods along the way. The class will also include an explanation of cooking techniques and the preparation of a few dishes to share. We will also explore the use of nuts, mushrooms, and okara in the crafting of delicious meat substitutes. Go beyond the Beyond Burger and explore the culinary possibilities of these unique plant proteins over the course of a fun and tasty weekend!

Students ages 14+ may register for this course independently.
