Course Overview

Fika is a tradition in Sweden where you sit with your family, friends, or colleagues for a coffee and tea break, and there’s typically something sweet on the side to enjoy as you connect with others. The Fika sweets take center stage in this mouth-watering class with chef Scott Graden, owner of the New Scenic Café. Scandinavian pastries, tarts, slices, cookies, and bars will be explored in depth as students make Mazariner (petit Swedish almond tarts), Katalan (a classic Swedish pastry with a buttery crust and a moist almond filling), Tebirke Bretons (flaky Danish pastries with marzipan filling and poppy seed topping), cardamom shortbread, thumbprints, Hindbærsnitter (Danish raspberry squares), Muskotsnitter (Swedish crispy, buttery nutmeg slices), Chokoladesnitter (crispy, chewy Swedish chocolate slices) and saffron snitter. 

Required Tools

  • Assorted containers for bringing treats home
  • A basket or box for those containers
