Dead of Winter Cooking

Course Overview

Reignite your winter menu with bold spices and local ingredients. (Yes, it is possible to eat well and locally even when the earth is frozen!) The menu will focus on simple techniques— roasting, braising, sautéing, and soups—for preparing healthy, delicious meals. We’ll work together to create one from each category using the best local ingredients from our nearby farms. Think Moroccan Muhammara; Curried Sweet Carrot Bisque; Vegetable Tagine; Chicken Tinga with Sweet Potato variation; and a luscious Lemon Posset for a sweet ending.

Students ages 14+ may register for this course independently. Youth ages 12-13 are welcome to register with an adult. Adult/child pairs will pay two materials fees. A 25% tuition discount applies to the youth registrant when registering with a full-paying adult; call to register.

  • Bring to-go containers – there are always leftovers
    • Bring a special chef’s knife if you have one you like.
