Classic French Everyday Cakes: Petit Fours

Course Overview

This course takes you along a journey through the making of several classic French everyday cakes, like Madeleines, Financiers, and Canelés. Also known as Petit Fours, each of the recipes are truly simple at the core, yet may feel intimidating due to some baking nuances that make the final product a work of art. Throughout the course, we will discuss and practice these techniques so you will be equipped with the knowledge and confidence to attempt and refine these bakes at home.

In addition, you’ll take home the sweet treats you make over the course of the two-day class (assuming there are some left).

Students will need to be on their feet for much of the class, and time will be spent using induction cooktops in preparation of batters and fillings. Students should be able to roll out dough and mix and whip batters and doughs by hand.

Students ages 16+ with the experience above may register for this course independently.
