Cardamom: A Global Approach

Course Overview

Get those taste buds ready to travel. Join chef Scott Graden, owner of the New Scenic Café, to bring the global flavor of cardamom from all parts of the world to the classroom. From savory to sweet, this delectable spice beckons our attention with an alluring aroma. Scandinavians and many Minnesotans know well the fluffy, twisted kardemummabullar (Swedish cardamom buns), but lesser known sweet delights will rival the favorites as class explores tastes of Europe and the UK while making cardamom bread and shortbread, cardamom french toast, and cardamom bread pudding. Off to Morocco, class will make lamb tagine, a tender cardamom-infused lamb stew and India will inspire a cardamom curry as well as chai tea.

Discover the diversity of cardamom during this truly tasty voyage. On day two, the class will culminate with a shared meal at around 4pm. Students may bring a guest to the meal. 

Required Tools

  • Assorted containers for bringing food home
  • A basket or box for those containers
  • Beverage for communal meal
