Bounty of the Big Lake: Fish Cookery

Course Overview

While many people enjoy the gift of Lake Superior’s beauty from the shore or from a vessel, how often do we think about the delicious food that dwells below the surface of the lake? In this class, students will discover different species of fish that thrive in Lake Superior, while using fish as the main ingredient in an exploration of cooking methods from around the world. The recipes we make will depend on the fish that are available. Expect dishes such as Pescado a la Veracruszana, cedar plank baked fish, or smoked fish spread. We will taste each dish and discuss appropriate side dishes. A materials fee of approximately $50-$80 will be collected by the instructor during class.
