Course Overview

Go behind the scenes of North House’s Birch Bark Bash fundraising dinner with Chef Scott Graden of New Scenic Cafe. Scott will take you step by step through the process of preparing (and eating) the delicious meal. The class will include a pecan tartlet topped with onion soubise, fig jam, blue cheese and frisée; braised lamb shank with semolina bread, chimichurri, and vegetables; tirimisu, mascarpone, coffee, rum, brandy and berries in addition to salted carrot and sour & bitter greens drizzled in béarnaise sauce; and gjetost creme brûlée with lingonberries madelformar.

Required

You will need the following tools for this class:

  • All required tools/materials are provided by your instructor and North House and will be available once the course begins.
  • On the second day, we will share a communal meal, beginning around 4pm, typically ending by 6pm.  Please feel free to bring a beverage of choice to enjoy with dinner (adult beverages are okay). You are welcome to bring a guest.

Optional Tools

Feel free to bring your favorite tools and whatever materials you might feel appropriate for this course.
