Course Overview

So, you've got a freezer full of venison and no idea what to do about it? Tired of dry steaks and burgers and yet another bland venison roast? After 20 years of not buying beef the Mead family has discovered myriad ways of serving up delicious, nutritious, mouth-watering venison dishes. We'll share some of our very favorite meals, super-easy sausage methods and we'll show how to preserve your harvest outside of the freezer, safely, by canning or drying venison. Bring your own venison, or purchase from the instructors (advance notice requested). We will share a meal at the end of class, and you'll take home a variety of preserved meats.
