Skin is not just the domain of leather! In this class, we will make three different traditional dishes made with animal skins. We will make cotechino (a type of Italian sausage), ciccoli (Italian pressed cake), and chicharrones (pork rinds). We will make and enjoy these delicious traditional foods that utilize often-overlooked parts of the animal.
