Course Overview

Puffy? Flaky? Crumby? All acceptable (and even highly desirable) if you’re a pastry. Your quest for the perfect homemade pastry starts here with baker David Bauer. Students will learn the basics of making croissants, puff pastry, and flaky tart dough by hand. We will explore the use of alternative whole grain flours in these pastries as well as seasonal variations. Don’t be tart-y for this delicious adventure in rustic baking.
