Course Overview

Hand pies, the Midwestern cousin of the British pasty, is a perfect treat for the colder months! In this class students will learn the theory of hand pie construction and make several different tasty pies, perfect for lunch on a chilly day or just as a luxurious snack. We will cover the secrets to structurally sound crusts, and what makes a good hand pie filling.

Note, this is a class that does not offer a gluten free or vegan option for recipes.

This class requires students to be able to use a rolling pin, and to use their hands in blending the crust. If a student does not have the hand strength or dexterity for mixing, they can contact the instructor to work out an alternate plan for dough preparation.

Students age 16+ may register for this course on their own.

Required Tools

  • Containers for transporting pies home- students can expect to bring home roughly 2 dozen small pies

Optional Tools

  • North House has many rolling pins! But if you have one that you love and feel comfortable working with, feel free to bring your own!
