Course Overview
Bring some spice to the northern winter! Working with Chef Rob, you will learn the basics of using both fresh and dried chile peppers, how to identify them, and which peppers to use for what dishes. Your recipes will include a traditional red mole sauce, pork carnitas tamales, hominy posole, scallop relleno salad, and last but not least – you will learn how to make chocolate truffles with red chile cajeta filling from scratch. Get ready to heat up your kitchen!
