Course Overview

Amaze your trekking and kayaking buddies with what you pull out of that tiny food pack. In this class the cuisine of India meets the Northwoods. It's easy, lightweight, healthy and inexpensive. During the course students will dish up: Lola's Curried Vegetable Pate, Boreal Chapatis, Rainy Lake Raita, and Red Lentils Kekakabic with garam masala and fresh mint. Everything is prepared from scratch with emphasis on organic ingredients. Efficient food-packing techniques, the philosophy of simplicity, and preparation will be discussed. Recipes will be provided. Please bring a plate, cup, fork, water bottle and day pack. We will take a hike along the shore and cook our meal.
