Course Overview

Savor the flavors of the North and prepare for a winter of great eating! This course offers students the opportunity to discover the cooking techniques and explore the flavor dynamics of preparing wild game. Multiple types of wild game (including duck, quail and elk) will be prepared using marinades, grilling, pan roasting, stewing and more! Each day includes a complete menu utilizing the freshest ingredients of the season. After preparing the multi-dimensional menu, students will savor a delicious meal at the close of each day. Students will take home recipes, with the skills at hand to share these unique and delicious meals with friends and family.
