Course Overview
Not everyone has the good fortune of having a Swedish grandmother, but Chef Scott Graden is a good stand-in. Anyone can learn to prepare holiday dishes still enjoyed in the Old Country. The quality of holiday foods is only surpassed by quantity. Swedish ham and meatballs are the foundation, followed by generous helpings of pickled sides: herring and beets. Mop it up with open-faced rye smørbrød and saffron buns known as lussikator. Finish with sweet træstammer among other desserts, and then find a comfortable spot to take the requisite nap. God Jul!
On the evening before the class, Scott will give a public presentation at 7pm; students are highly encouraged to attend. On Day 2, the class will culminate in a shared meal at 4pm.
