Pie: The Lost Art

Course Overview

Pie - a country dessert that makes the mouth water and the heart yearn for a simpler time (when we too might have had time to master the art of pie making). But hope is not lost, as you will discover the timeless techniques required to make an array of classic pies and rustic tarts. Rustic crust, classic crust, lattice top, crumble top, custard-filled, fruit-filled, cream-filled and more are included. Pies are baked both in a convection oven as well as in a traditional wood-fired oven. An end-of-day old fashioned pie social is planned. Students will make multiple pies and may select one to take home.
