Course Overview

Join chef Scott Graden, owner of New Scenic Café, for an introductory course on the flaky and layered wonders of laminates. Spend your days in class learning how thin alternating layers result in delicate, rich pastries, and get an introduction to Scott’s professional-grade laminator. Students will learn the secrets of supreme danish and croissant doughs as they prepare delectable butter croissants, pain au chocolat, and fresh fruit danish. Savory dishes will also be included - Chef's Choice! Bon appetit!

Required Tools

  • Assorted containers for bringing food home.
  • A basket or box for those containers.

Optional Tools

  • Bring your favorite apron, if you wish.
