Course Overview

Desem baking is a Flemish whole-grain baking tradition that utilizes freshly milled grains, live grain cultures (sourdough) and wood-fired brick ovens to create breads of superior flavor, nutrition and digestibility.This is the bread that inspired Alan Scott to build his first brick oven, which sparked a global renaissance in traditional baking methods. In this course we will discuss the philosophy, implications, and practice of desem baking. You will create Desem wheat, rye and spelt breads, as well as bring home live desem cultures for further baking endeavors.
